I made this last night and it was really tasty! I did the roasted chickpeas with smoked paprika & sliced radish for crunch. I didn’t make my own croutons as I had some in the cupboard already. The dressing was really tasty after it sat for a few hours in the fridge. I also thinned it out a bit with water.

I made this with the vegan dressing option. I added some chopped red pepper, parsley and tomato because I needed to use them up. It was Delicious, I will definitely make this again!!
