These were a huge hit with my two kids (10 and 13) and they took my husband and i back to our trip to Tokyo 20+ years ago! SOO GOOD!

Any recommendations for a side to round out the meal? maybe a veg that’s not too salad-y (kids, 10 and 13…)

Hi Abigail, I’m so glad you’ve loved it! I haven’t tried a vegan version, but I would try using Just Egg – it cooks similar to eggs so I think it might work here.

I LOVE this recipe and have made it frequently since I first discovered it. First, a tip: I make this in my waffle iron so I don’t have to deal with flipping the ‘pancake.’ It works so well!

Second, a QUESTION: I have a vegan guest coming to dinner and want to make this vegan. Has anyone tried making this with vegan egg substitute instead of egg?

I know the recipe doesn’t call for carrots, but I shredded in one carrot, along with the cabbage and green onions (what’s still growing around here). Also shredded in about 1/3 cup onion, and cut up about 10 pre-cooked (thawed) shrimp into bit sized pieces. I’ll definitely make these again – they were delicious. I had issues with them falling apart. I let the second batch cook about 5 minutes before flipping, then cooking another 3-4 minutes. They browned really nicely on medium heat. Next time I might add a little flour to help them stay together. Was yummy served with the chili pepper hot sauce that I had just made (garden fresh), and garnished with more green onions.
