Recipe was great! I’d probably do the eggs separately next time just because I personally felt it was difficult to cook them evenly in the wells. I also added a chipotle crema drizzle on top.

I was already in when I read the title, sweet potatoes are one of my favorites, creatively used here in a hash too, much better than plain old potatoes, thank you
